Wait! Viktor has been waiting, working, wishing for this moment since he arrived in Geneva...and now, at the climax of his success he runs away? What happened?
I think that the reality of what he has done finally hit him. Up until then, he had only focused on finishing his project, but once the monster was complete, he no longer had control of what could happen. He realizes that the monster finally has a life of its own and can make its own decisions and that the monster's actions are his responsibility.
He didn't even know what he created. I don't see how it is possible to run from something you created. He should know what the character of the monster was going to be if he created it. He would also know if it was violent or not.....so really the fact that he ran is unrealistic and far fetched. He wanted to create a life, not a monster, and he shouldn't be afraid of it.
Just because he put together the monster's body doesn't mean that he will know what it's character will be like. Just the realization of giving life to the monster, the consequences of his actions, and fear for his life made him go insane.

He got skuurd...
He blames the death of William on the Monster... and in that light he realizes that he let loose upon the world a murderous creature...
He doesn't want to take responsibility for the death of his beloved William... so he got skuurd...

well obviously he got scared...didn't want the responsibility and ran away from it as fast as he could...kinda sounds like a dead beat dad..
